Sweet potato protein pancakes anybody? I won’t lie to you, I actually crave pancakes a lot. I mean who doesn’t love pancakes on a Saturday morning? In fact. they’re even better on a Monday when you’re feeling a little blue about the week ahead. You know – comfort food.
But, that’s why I designed my very own pancake recipe that makes absolutely scrumptious pancakes – ENTIRELY guilt-free. Since we’re all worrying about the waistline these days. In fact, they’re actually pretty healthy too, especially if you’re lacking Protein, Vitamin E and Vitamin A (Beta-Carotene). Besides, I know you guys are busy too and need more recipes to make eating well throughout the week a little easier.

How Did I Think Of A Sweet Potato Pancake?

Now this is one power lunch! I have felt a little sorry for myself being sick and all so I decided to stop moping around and make myself some Protein Sweet Potato and Oat Pancakes to cheer up! 😜😁❤ Omg and they were delicious! Ingredients: Half Cup Whole Oats, Half a Cooked Sweet Potato, Half Cup Milk, Half Cup Water, Scoop Protein Powder of choice, Cinnamon, Nutmeg, 2 tsp Baking Soda and 2 Eggs. Blend it up and cook with a little olive oil. ❤❤ Then serve with half a sliced frozen Banana, a tablespoon Greek Yoghurt and sprinkle over some Cocoa powder. To be honest, it was actually a really hectic week for me. This was about 3 months ago. I was probably really stressed out, more so physically than emotionally. Mainly, because of over-exercising and instructing too many classes, Not going to bore you with that today, so we will just get straight to the pancakes. Basically, I had a really random craving for sweet potato at around noon on a weekday. It was before my shift at the gym. I knew there was like a hundred forgotten-about sweet potatoes in my kitchen cupboard. They were most likely going to go off if I did not actually make an effort to cook them, (I hate throwing out food! Such a waste. Lol.)
Yes, I know it is a really random thing to crave, but I am 100% sure you have craved weirder things…
Anyhow, a big old baked sweet potato really was not going to cut it. Then, I thought about pancakes. #Lightbulb.
I realised that something pretty mundane could potentially turn into something that I usually turn down because of its effects on ze‘ waistline.

My Secret Ingredients List
- 1 Sweet Potato.
- 1 Teaspoon Olive Oil or Olive Oil Spray ‘n Cook.
- 2 Whole Eggs or 4 Egg Whites (Whatever suits your personal goals best. I used 2 whole eggs at the time because they are more nutritious and I didn’t really feel like separating the egg yolks from the whites. However, if you’re trying to lose body fat and build lean muscle maybe the whites are a better option. Both options are fine!)
- 1/2 Cup Whole Oats.
- 1 Flat Teaspoon Baking Soda.
- 1/2 Cup Water.
- 1 Tablespoon Cocoa Powder.
- 1 Teaspoon Cinnamon.
- 1 Tablespoon Flaxseed/Linseeds. (Optional)
- 1 Scoop of your favourite Protein Powder. (I used EVOX Strawberry 100% Whey, but you can use the one you prefer. If you don’t want to use a flavoured powder then add Vanilla Essence for extra flavour.
Sweet Potato Protein Pancake Preparation
Rinse your sweet potato under cold water, Then, you need to place a pot of water on the stove to boil. Cut your sweet potato in half and place into the water before the water is boiling. Cook for approximately 10 minutes. Poke with a fork and if the sweet potato is soft, it is ready.
Get your blender out. A smoothie blender or food processor will work perfectly. Chuck your sweet potato into the blender and turn on until it has formed a puree, Don’t worry about peeling your sweet potato, the skin is very good for you and will blend in nicely.
Now you need to add the rest of your ingredients. First, add the cocoa powder, cinnamon, protein powder, flaxseeds, baking soda and oats. Now, you can add the eggs and water. Blend all the ingredients together until the mixture is smooth and is showing little air bubbles.
Place a non-stick pan on high heat and grease with olive oil. Once your pan is hot enough, turn it down about 2 degrees. Now you’re ready to grab a ladle and carefully spoon your batter onto the pan. I find these work best if they are spooned on with less batter at a time and medium-sized. Wait, approximately 2 minutes per side before flipping them.
The bigger you make your pancakes the less this mixture will make. I made quite a few by making smaller pancakes. However, it is definitely enough for one person and can be stretched out to two.
My Personal Serving Suggestion
These are totally amazing because they’re really good on their own. But, if you want to spice them up have them with half a sliced Banana and spread a tablespoon of Greek Yoghurt or Peanut Butter on them. They’re also yummy with half a cooked apple or frozen berries and some cinnamon or even a little dash of honey!
I love these because they are quick and easy to make. They are brilliant for meal prep and satisfying a craving in a healthy, smart way!
